2005 Discovery Finally Exposed!
Dr. Vladimire Vuksan, famed scientist and pioneer of the functional foods movement and one of the developers of the revolutionary glycemic index at the University of Toronto was part of the 6 month study of Salba, a white variety of the Salvia Hispanica L plant. The Saturday Evening Post (November/December 2005) ran the article, “Seeds of Wellness: Return of a Supergrain”, detailing many of Dr. Vuksans’ findings on Salba. The following details some of the properties he discovered: 3 1/2 ounces of Salva contains;
- as much omega-3 as 28 ounces of Atlantic salmon,
- more calcium that 3 cups of whole milk,
- higher, and more bioavailable protein content than soy,
- more vegetable protein content than 1 1/2 cups of kidney beans,
- highest natural fiber content of any food – more fiber than 1 1/4 cups of All-Brand cereal,
- the iron equivalent of 3 cups of raw spinach,
- the potassium content of 1 1/2 bananas,
- as much Vitamin C as seven oranges,
- antioxidant capacity 3 times the strength of blue berries with Myrecetin counts 270 times the strength of red wine,
- diabetic safe.
Dr. Vuksans’ team concluded Salba, “could be considered the world’s most nutritious food crop and thus can be used as a global remedy for world hunger”. The research observed Salba
- Reduced after meal blood glucose and plasma insulin levels compared to the control diet C-Reactive protein, a marker of inflammation, was significantly lower (40%) than control at the end of the study.
- Significantly lowered the systolic and diastolic blood pressure (>10mm/5mmGH).
- Showed no adverse effect on glycemic control or blood lipids as previously seen with high doses of omega-3 fatty acids.
